The year 2012 marked the first time that my pasture-raised beef was available to a limited number of individuals in my community. I sell directly to consumers.
I am very pleased to say that I have a butcher that besides dry-aging the beef for slightly over 21 days he has produced an amazing final product. As always, the beef that is being offered is from my cattle that were born to me as calves. They have grazed in the hills of Carmel Valley and along the coast in Pacific Valley which is thirty miles south of Big Sur.
The steaks are one and one half inches in thickness and are individually wrapped. The roasts are approximately two pounds.

In creating your order, think about the number of each item you would like to have. The packages all have the weights on them. Figure amounts for ground beef and fajita meat by the pound. The bones are sliced.
